Easy Mocha Lovers Tart
Recipe by: Colleen Cackowski
Yield: One 9-inch tart
THE CRUST
1½ cups Almond Meal
¼ cup Raw Jungle Grown Cacao Powder
¼ cup Coconut Oil, melted
2 TBS Honey
2 TBS Raw Maca Powder
1-2 TBS Chia Seeds (ground in a coffee grinder, if possible)
Pinch of Salt
Directions: Process the mixture in a food processor until all ingredients are well combined and start to stick together. Add a teaspoon of water if necessary to make it stick better. If you don’t have a food processor it’s OK to mix by hand but make sure everything is well combined and starts to clump together before filling the tart pan. Press mixture into a 9” tart pan and place in the fridge to set while you start to prepare the filling.
THE FILLING
2 medium ripe Avocados, pits removed
½ cup Raw Jungle Grown Cacao Powder
1/3 cup Coconut Oil, melted
¼ cup strong Longevity Coffee® (or substitute coconut water)
3-4 TBS Honey
2 TBS Coconut Sugar
Pinch of Salt
Directions: Combine all ingredients in a high performance blender, and process until smooth. You can adjust the final thickness and intensity of flavor by adding more or less liquid (coffee or coconut water). Adjust also for sweetness, depending on your preference.
Fill the crust with the pudding mixture, spreading evenly. Garnish with jungle grown cacao nibs, raw chocolate chips, shredded coconut or fresh berries. Chill to set and enjoy!
**At Longevity Warehouse, we source only wild jungle grown cacao from heirloom trees in Ecuador. To read more, click here.
Please Note: When the Mocha Lover’s Tart is stored in the fridge, it will thicken due to the coconut oil. Plan for this accordingly by adjusting the amount of liquid to oil you use in the recipe, depending on how dense you would like the finished product. This tart will keep well, covered in the fridge, for up to a week.
