How to Choose the Best Coffee Ever (for your Health!)


You have heard the controversy about whether or not coffee is good for you. It seems to offer amazing health benefits, yet it can also be hard for some peoples’ systems to handle, especially if they consume too much of it.

Coffee is a lot like chocolate. There’s a world of difference between a candy bar that is made from genetically modified ingredients; vegetable oil, processed sugar, and soy versus an organic stone-ground raw chocolate product sweetened with whole foods and with nothing artificial added.

This commonly leads to mold growth and usually results in contamination with ochratoxin-A in the final product.

Interestingly, many of the negative side-effects of coffee which are generally attributed to caffeine are actually the result of the ochratoxins in the coffee: things like racing heartbeat and jitteriness, and they also make the flavor more bitter.

The presence of ochratoxins in coffee can be significantly impacted by the procedures which are utilized during processing. While molds can be killed off during the roasting process, ochratoxins usually survive. In fact, ochratoxins have been known to survive autoclaving for 3 hours.  (IARC 1976).

Quality over Quantity

Before considering any of the procedures used in processing coffee, it’s important to know that coffee is one of the most highly chemically-treated crops in the world.

shutterstock_305906147The pesticides and fertilizers that are used during the farming process slowly destroy the soil’s fertility and seep into the earth and the water supplies. Buying certified organic coffee is a must! This means that the beans have been tested for chemical residue and have passed the test.

Sustainable farming practices are important. Coffee produced in natural conditions, at high altitudes, in mineral-rich soil, produces some of the best tasting beans in the world. Coffee has a very high level of antioxidants and the quality of the soil has a lot to do with this. Fair trade means that the farmers enjoy better living conditions and wages.

The care taken from harvest through manufacture has a significant impact.

Also, using special equipment to roast the beans with air means that ochratoxins aren’t produced and the resulting product is uncontaminated—a rarity in today’s marketplace.

A good quality coffee bean contains multiple nutrients, including polyphenols and flavonoid antioxidants. You can detect the quality of a coffee bean by taste and smell. A good coffee should have a good aroma as well as a pleasant taste. If it tastes stale or rancid, you will know right away not to drink it.

If you are NOT buying whole bean coffee now, there is a good chance that the coffee you are drinking is rancid.

Most commercially available ground coffee falls into this category. Coffee packed from ground beans cannot even survive a week without becoming stale. The rate of rancidity increases once you grind the beans, and so the contents of a new package have already degraded before you even purchased it.

Unless you buy whole, organic beans, you’ll miss out on the nutrition that could be available to you in coffee.
