Raw Chocolate Chip Cookies
This cookie dough is safe to eat raw! You can also be imaginative and
stir in extras, like chopped dried fruit, chopped nuts—anything you like.
1 cup raw oat groats, soaked and drained, or 1 cup oat flour
1 and 3⁄4 cups raw cashews
3 tablespoons raisins
1⁄4 cup coconut nectar, raw organic honey, or maple syrup
1⁄4 cup coconut oil
1 teaspoon vanilla powder
1⁄4 teaspoon ground cinnamon
Pinch of good-quality sea salt
1⁄4 cup raw chocolate chips
If you are using soaked oat groats, drain and rinse the oats and add them
to a food processor along with the cashews. Grind up the raw cashews
and oats until you have a fine flour. If you are using oat flour, process the
cashews before adding the flour.
Add to the food processor the raisins, coconut nectar, coconut oil, vanilla
powder, cinnamon, and salt. Process the mixture until it is well combined
but still a bit chunky. When the dough forms a big ball, stop processing,
transfer the dough to a bowl, and stir in the chocolate chips with a spoon.
Place the dough in the refrigerator to harden for about 30 minutes.
You have a few different options for serving:
Roll out the dough and use a cookie cutter to make fun shapes.
Shape the dough into balls and roll them in shredded coconut.
